Hydration and W strength: which flour for which dough
Hydration and flour strength always go together. A weak flour «drowns» in water; a strong one handles high hydration and long rises.
What W strength is
W measures how well a flour's gluten withstands handling and water. The higher it is, the «stronger» the flour and the more water it absorbs while holding structure.

Rule of thumb
If you want more hydration, you must raise W too and extend the time. High water + weak flour + short time = dough that won't stand up.
